Traditional white teas are a style of unfermented tea that receive the least amount of human processing. The newly harvested leaves are simply allowed to rest under the sun, and then dried under low heat.   The tea category is named after the “White Tea Tree” from Fujian province whose young leaf buds are characterized by silvery white down.
